Blueberry Lemon Protein Baked Oats

This is one of my go-to meal prep-friendly breakfasts that is easy to make and super satiating, supports balanced blood-sugar, and is full of nutrient-dense goodness.

Notes:

19g protein per serving
If using dairy free milk, remember that protein will be less so consider serving with a hard boiled egg, sausage, or yogurt on the side!

Serves 6
Ingredients:
- 2 cups oats (I use sprouted, GF oats)
- 1/2 cup vanilla protein powder (I used Just Ingredients Vanilla Protein powder)
- 2 cups milk of choice (use grass-fed milk)
- 1/4 cup seeds (i.e. flax, chia, hemp)
- 2 eggs (I used pasture raised)
- 2 tbsp maple syrup or coconut sugar
- 1 tbsp grass-fed butter or coconut oil
- 1 tsp vanilla
- 1/4 tsp salt
- 1 cup fresh or frozen blueberries
- Zest from 1 whole lemon (don’t skip this!)

Directions:
- Preheat oven to 375 and grease your baking dish (8in square).
- Mix oats, protein powder, seeds, and salt together.
- Add milk, eggs, maple, butter, and vanilla.
- Add zest and blueberries.
- Pour in baking dish and baked for 35 minutes, or until golden brown on top.
- REHEAT: in a toaster over/air fryer for 10 minutes at 350 or on stove top in a small pan with 1/4 cup milk poured on top until warmed through.
