Herby Egg & Sausage Bake

Gentle (yet important) reminder: 2 eggs for breakfast gives you 12 grams of protein just is not nearly enough for an adult person.

If you find yourself hovering in your kitchen all day looking for snacks, opening and closing doors to find something to much on, only to get sugar cravings in the afternoon, that is your sign that you are not eating enough protein 📣

If morning appetite is non existent, start with a mini-breakfast and be consistent. After a few days or weeks you will mostly start having an appetite again and this is something to be celebrated! Energy is not made from caffeine or willpower. You are a human that needs nutrients to thrive, so nourish yourself. And have something tasty while you’re at it 🫶

Serves 6, 30g protein each slice.

Ingredients
1lb sausage (pork or chicken)
10 eggs (pasture raised preferred)
1 cup cottage cheese (organic preferred)
1 cup cheddar (organic preferred)
1/4 cup milk or bone broth
1/4 herbs of choice (I used rosemary, thyme, and sage)
3 green onions, sliced
1/2 onion, chopped
1 bell pepper, chopped
1 zucchini chopped
1 cup mushrooms, sliced
S&P

Directions
1. Preheat oven to 375. Grease 9x13 pan with butter or oil.
2. Brown sausage, then set aside in bowl.
3. Sautéed veggies in leftover sausage fat until tender. Season with S&P. Then add to sausage bowl.
4. Add green onions and herbs to bowl.
5. In a separate bowl, whisk eggs. Then add cheeses and milk. Sprinkle with some S&P.
6. Add egg and cheese mixture to sausage mix, then transfer to baking dish.
7. Bake for 25 minutes or until golden brown.

Note: have fun and change up the veggies and herbs to your liking or what you have on hand! My recipe are more suggestions than anything :)
